I have been looking and looking and I am completely discouraged. I thought that this plugin gave you the ability to create a Quiz. I need help on solving this problem. I can not find it in the documentation. Where can I please find the information on how to create a Quiz for Students.

The docs are a bit outdated.
You need to go and create an assignment.
Below the content editor, you should see the dropdown list of quiz options.
Also check the video on the homepage:
