I am looking for tutorials on creating a custom template within the “..members/single” folder any tips? I have already setup a child theme for buddypress 1.7 beta

This tutorial is decent but if your using different versions of WP, BP, and a different theme then expect to have to make some adjustments. It is a good starting point though!
