Is it possible to tell the nav bar to stay at the top of the iPhone screen and not scrowl when the page scrowls? Basically, I’d like it to stay at the top like a native iPhone app would.

Is there a way to make all mobile devices by default go to the regular theme and they can click on the switch link if they want to go mobile or I can setup a subdomain like m.mydomain.com for the mobile theme?

Yes the plugin is working fine for me. I just need to make it so users can switch to the mobile theme if they choose to.
