Blocking part of the profiles changes

Hello
I am using BP 1.9.1 with wp 3.6.1 for an intranet.
All members have access to their extended profile, which they can manage themselves.
I need to find a way to block some changes (name, phone, email address, function in the organization) but not all !
I don’t know in which files I should look. May someone help ?
