How to Attribute a Category to all posts by a user

Hi all,
New to BP but I’m a WP veteran (sort-of).
There’s something I’m trying to work out hoping one of you can help, I’ll tell you the situation:
When a user creates an account I want them to select a ‘category’
Then, all posts from that user will be attributed to that category.
It could also work if it were a ‘tag’ instead of a category.
There will be about 7 categories in total.
Does anyone know how I would go about this?
