Modify the profile

Hi,
Could we modify or set up the profile field ?
for ex. a user want to teach German, so the profile is Teach [ ], let the user fill :German,
on the other hand, he want to learn English, so the profile is Learn [ ], let the user fill English.
because the existed profile field is not 100% for me.
