Profile update notification

Howdy,
I have a member site with X profile fields, where users can up- og downgrade their membership of my site via a multiple choice X profile field. But I also have some fields with less important info like “favorite color” or links to social profiles.
When a user updates his/her profile, it shows in the activity field, but I can’t see what has been changed.
I would like to be notified as admin, when a member changes a specific X profile field, preferably with info like “User Z changed X profile field from A to B “.
Is this possible?
