I am looking to change the name on the the forum tab, perhaps “conversation” or “stories”, etc.

Any help would be greatly appreciated.

Many solution are possible… but the best is to create a child theme so you don’t loose your custom changes at the next BP update.
In the child theme, you install a copy of header.php where the menu containing “forum” is set. That’s all.

Actually, I would create a custom language file. In the end it’s much simpler in my opinion. We did basically what you’re talking about.
