Correct. Sorry for not posting later this morning. Digging into the bp-avatar.php turns out it was the $title calling the email, which makes absolutely no sense being named that and relaying to the email address. But that is the culprit.
I have changed the /wp-content/plugins/buddypress/bp-themes/bp-default/activity/activity-loop.php file to reflect changes mention here: http://wpmu.org/how-to-customize-the-buddypress-activity-loop/ but it does not change my site.
There is mention of altering the child theme, however, I have no other files anywhere named activity-loop.php.
I am using the Hueman theme with my site. Is this considered a child theme? This is incredibly frustrating.
