During the day, I pursue an occupation I love that impacts others to be more financially sound and live their dreams knowing their financial strategies are secure. Along with this role, I happily carry out the roles of daughter, sister, wife, mother to twins, in-law and friend to some of the best people that I know. Among these roles, I encountered a passion that I didn’t know how to pursue. This passion was born out of a condition that I would have chosen to bypass in life; but nonetheless, I learned major life lessons and uncovered beauty. In 2015, it was discovered I had severe ulcerative colitis and indeterminate Crohn’s. When this situation presented itself, I presumed that it would be no big deal, that medication would immediately resolve the problem, and I would soldier through it as I often had in other situations. After losing 20% of my body weight and trying to find answers, I was forced to examine my eating choices. Along with the correct medical treatments and changing the way I ate, I have never felt better. However, changing the way I ate resulted in giving up a few beloved foods (albeit junk food) such as pizza, ice cream, cupcakes, brownies, and much more. Out of this conundrum, my passion was born. What if I recreate my favorite foods and made them healthy and nourishing? What if I used my talents to bake to prove to others that healthy food can taste delicious and mimic the junk food that we all know and love? And, what if I use my love of writing to blog these new recipes? Indeed, a passion was born: Nourishing Nostalgia. Food should be nourishing and fuel to live. We can’t carry out God’s plans for our lives if we aren’t nourished and fueled for the excitement that life and God has to offer. Along with providing nourishing recipes, I hope to provide nostalgia as well as it never hurts to look back as we soldier on looking forward.
