Does anyone else have this problem? The Activity is empty even though there is definitely activity on the site.

Can anyone point me in the right direction to figure out why this anomaly exists?

This is related to the strict mode of mysql. https://buddypress.org/forums/topic/there-was-a-problem-posting-your-update-please-try-again

BP 1.2.2 works provided you run a script to fix an existing table.
