hi, I installed the plugin and actually does not do what is required. The plugin indicated by you only provides a way to export personal data shared with the platform but does not provide me with a way to obtain a proof that the user has given consent to the processing of personal data. I should be able to add a checkbox to the registration form where the user is notified that the data is processed according to my privacy policy.

Option: I agree ( default value: unchecked )
Visibility: just-me with option: enforce visibility

Your solution works but the user can modify the field in his profile settings after registration (the user should delete his account for delete the data processing).
You can go with this plugin https://wordpress.org/plugins/buddypress-admin-only-profile-fields/ to set the visibility to hidden/admin only.
