I made two posts in Buddypress.org, it reflects that in my profile sidebar, yet I can’t get back to them because it says I havent started any posts and have no activity! Is there something I am missing to get the posts to show in my profile?

Go to your profile page and change “Name (required)” to something other than your username.

Nope, If i go to Forums/Topics Started or replies it still comes up blank.

Great. It will not resurrect the old activities but will start “recording” your activities now.
